Classes of knives

Hardness and tenacity of the knives are different criteria.
Hard knifes retain sharpeness but they are sometimes fragile and you should not use the knives for frozen food or bones.
Even stain resistant knives someteimes get rust. If you cut something very acid or salty, please wash the blade with water.
Non stain resistant knives may get rust by the moisture in the air. If you do not use knives for a while, dry the blade and wrap it with the stain-resistant paper, which is used when purchaed, or put some machine oil (not cooking oil) on the sureface.

Japanese Style Knives

Ginmaki

This is a set of the highest grade of Japanese knives. Honyaki is applied to both sides of the blade, the handle and sheath are sterling silver, and the set is presented in a brocaded-cloth bag and paulownia box.
